Ingredients
- 1 can (~15 oz) of kidney beans
- 4 boxes of chickpea mac n cheese (I used Banza)
- 2 green peppers, diced
- 2 onions, diced
- ½ cup salsa
- ½ cup grated parmesan cheese
- 1 package of ground chicken
- 2 Tbsp garlic powder
- 1 ½ Tbsp chili powder
- 1 ½ Tbsp cumin
- Salt and pepper to taste
- Fresh cilantro
Directions
- Prepare the boxed mac n cheese per instructions on the package.
- While the mac n cheese is cooking, dice and cook you peppers and onions in a pan. Add ground chicken when vegetables begin to soften.
- Add all spices to vegetables and chicken.
- When the mac n cheese is done cooking, drain and place in a baking dish. Add the cheese (from package) and salsa to dish and mix well. When chicken and vegetables are done cooking, add that to dish also and mix well.
- Top with grated parmesan cheese. Bake in the oven 25 minutes at 350 degrees. Top with fresh cilantro. Enjoy!
