Taco Mac Cheese

Ingredients

  • 1 can (~15 oz) of kidney beans
  • 4 boxes of chickpea mac n cheese (I used Banza)
  • 2 green peppers, diced
  • 2 onions, diced
  • ½ cup salsa
  • ½ cup grated parmesan cheese
  • 1 package of ground chicken
  • 2 Tbsp garlic powder
  • 1 ½ Tbsp chili powder
  • 1 ½ Tbsp cumin
  • Salt and pepper to taste
  • Fresh cilantro

Directions

  1. Prepare the boxed mac n cheese per instructions on the package.
  2. While the mac n cheese is cooking, dice and cook you peppers and onions in a pan. Add ground chicken when vegetables begin to soften.
  3. Add all spices to vegetables and chicken.
  4. When the mac n cheese is done cooking, drain and place in a baking dish. Add the cheese (from package) and salsa to dish and mix well. When chicken and vegetables are done cooking, add that to dish also and mix well.
  5. Top with grated parmesan cheese. Bake in the oven 25 minutes at 350 degrees. Top with fresh cilantro. Enjoy!
