Easy Black Bean Burgers Submitted by Susan Berkman

Ingredients
- 2 cans (~15 oz) black beans, rinsed & spread on a paper towel to dry
- 1/2 large red bell pepper, finely diced
- 1/2 large yellow onion, finely diced
- 3 garlic cloves, minced
- 1/2 cup breadcrumbs
- 1/2 cup shredded cheddar cheese
- 2 large eggs
- 1 Tbsp Worcestershire sauce
- 1 Tbsp ketchup
- 1 Tbsp spicy mayonnaise
- salt and pepper, to taste
Directions
- Preheat oven to 325°F. Spread beans evenly onto a foil-lined baking sheet. Bake for 10-15 minutes, or until slightly dried out.
- While beans bake, heat a small skillet over medium heat. Sauté pepper, onion, and garlic until soft, about 5-6 minutes.
- In a large bowl, combine breadcrumbs and cheese. Add onion mixture and stir to combine. Add eggs, Worcestershire sauce, ketchup and mayonnaise; stir until combined. Add dried beans and mash all ingredients together with a pastry cutter.
- Form mixture into 8 patties, using about 1/4 cup of mixture for each patty.
- Place patties on a foil-lined baking sheet. Bake at 375°F for 20 minutes, flipping halfway through. Serve with your favorite burger toppings!
