Cajun Red Beans Rice

Ingredients

  • 1 (27 oz) can Spicy Blue Runner Red Beans (do not drain)
  • 1 can (~15 oz) red kidney beans, drained
  • 2 cups brown or white rice
  • 12 oz, chicken sausage (Andouille or Original flavor), sliced
  • ½ medium white onion, chopped
  • 1 Tbsp avocado oil
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Tony Chachere’s seasoning
  • 3 bay leaves
  • Chopped green onions (garnish)

Directions

  1. Add the avocado oil to a pot. Cook the white onion and sliced chicken sausage on medium heat together in a large pot. Cook for 5 minutes until onions start to look translucent.
  2. Meanwhile in a separate pot, measure 2 cups of rice and cook according to the directions on the package.
  3. Add the blue runner red beans and drained red kidney beans into the pot of sausage and onion. Add water if needed for consistency. The consistency should be a creamy texture.
  4. Season with black pepper, garlic powder, Tony Chachere’s seasoning, and bay leaves. Let simmer for 15 minutes.
  5. Serve over brown or white rice. Sprinkle chopped green onions as a garnish.
