Ingredients
- 1 (27 oz) can Spicy Blue Runner Red Beans (do not drain)
- 1 can (~15 oz) red kidney beans, drained
- 2 cups brown or white rice
- 12 oz, chicken sausage (Andouille or Original flavor), sliced
- ½ medium white onion, chopped
- 1 Tbsp avocado oil
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp Tony Chachere’s seasoning
- 3 bay leaves
- Chopped green onions (garnish)
Directions
- Add the avocado oil to a pot. Cook the white onion and sliced chicken sausage on medium heat together in a large pot. Cook for 5 minutes until onions start to look translucent.
- Meanwhile in a separate pot, measure 2 cups of rice and cook according to the directions on the package.
- Add the blue runner red beans and drained red kidney beans into the pot of sausage and onion. Add water if needed for consistency. The consistency should be a creamy texture.
- Season with black pepper, garlic powder, Tony Chachere’s seasoning, and bay leaves. Let simmer for 15 minutes.
- Serve over brown or white rice. Sprinkle chopped green onions as a garnish.
