Black Bean Feta Tacos

Ingredients

  • 2 cans (~15 oz) black beans, drained and rinsed
  • 2 tsp chopped garlic or 1 teaspoon garlic powder
  • 4 tsp olive oil
  • 2 Tbsp lime juice
  • 1 bag coleslaw or broccoli slaw mix (no dressing)
  • 4 green onions, chopped
  • 1 bunch (about 2/3 cup) cilantro, chopped
  • Salt & pepper to taste
  • 12 corn tortillas
  • 2/3 cup feta cheese

Directions

  1. Partially mash black beans in a medium-sized bowl; stir garlic. Set aside.
  2. Combine slaw mix, green onions, and cilantro in a large bowl. Add olive oil and lime juice and toss to coat. Season with salt and pepper to taste.
  3. Heat large non-stick skillet or fry pan over medium heat. Spray with oil or cooking spray. Add tortillas in single layer.
  4. Spread about 1/4 cup of bean mixture onto half of each tortilla. Cook for 1 minute. Fold tortilla in half and cook until lightly toasted on each side.
  5. Fill tacos with feta cheese and slaw mix. If you like spicy flavors, drizzle with hot sauce or sprinkle with cayenne pepper.
