Black Bean Feta Tacos Submitted by Laura Andromalos

Ingredients
- 2 cans (~15 oz) black beans, drained and rinsed
- 2 tsp chopped garlic or 1 teaspoon garlic powder
- 4 tsp olive oil
- 2 Tbsp lime juice
- 1 bag coleslaw or broccoli slaw mix (no dressing)
- 4 green onions, chopped
- 1 bunch (about 2/3 cup) cilantro, chopped
- Salt & pepper to taste
- 12 corn tortillas
- 2/3 cup feta cheese
Directions
- Partially mash black beans in a medium-sized bowl; stir garlic. Set aside.
- Combine slaw mix, green onions, and cilantro in a large bowl. Add olive oil and lime juice and toss to coat. Season with salt and pepper to taste.
- Heat large non-stick skillet or fry pan over medium heat. Spray with oil or cooking spray. Add tortillas in single layer.
- Spread about 1/4 cup of bean mixture onto half of each tortilla. Cook for 1 minute. Fold tortilla in half and cook until lightly toasted on each side.
- Fill tacos with feta cheese and slaw mix. If you like spicy flavors, drizzle with hot sauce or sprinkle with cayenne pepper.
