Ingredients

can (~15 oz) of white navy beans w/liquid, pureed
- 1/2 cup brown
sugar; packed
- 2 eggs, beaten
- ½ tsp vanilla
- ½ tsp cinnamon
- ¼ cup soften butter
- ½ tsp baking soda
- 1 cup all-purpose or whole wheat flour
- 1 ½ cup rolled oats
- 1 cup dried cranberries (or preferred choice)
Directions
- Pre-heat oven to 350OF
- In a large mixing bowl cream pureed beans, sugar, and butter
- Add eggs and vanilla and beat well
- Combine flour, baking soda, cinnamon in a small bowl
- Add combined flour, baking soda, cinnamon to the bean, sugar, butter, egg, and vanilla mixture
- Add the rolled oats ½ cup at a time, gently fold in the oats spatula
- Add the cranberries (or other dried fruit or choice), gently fold in the fruit with a spatula
- Drop by heaping tablespoon on a cookie sheet covered with non-stick baking paper
- Bake for 10-12 minutes or until the cookies seem solid and the bottom edges look a bit browned
- Remove to rack and cool
