Nutricia fitter oatmeal cookies

Ingredients

  • 1 can (~15 oz) of white navy beans w/liquid, pureed
  • 1/2 cup brown sugar; packed
  • 2 eggs, beaten
  • ½ tsp vanilla
  • ½ tsp cinnamon
  • ¼ cup soften butter
  • ½ tsp baking soda
  • 1 cup all-purpose or whole wheat flour
  • 1 ½ cup rolled oats
  • 1 cup dried cranberries (or preferred choice)

Directions

  1. Pre-heat oven to 350OF
  2. In a large mixing bowl cream pureed beans, sugar, and butter
  3. Add eggs and vanilla and beat well
  4. Combine flour, baking soda, cinnamon in a small bowl
  5. Add combined flour, baking soda, cinnamon to the bean, sugar, butter, egg, and vanilla mixture
  6. Add the rolled oats ½ cup at a time, gently fold in the oats spatula
  7. Add the cranberries (or other dried fruit or choice), gently fold in the fruit with a spatula
  8. Drop by heaping tablespoon on a cookie sheet covered with non-stick baking paper
  9. Bake for 10-12 minutes or until the cookies seem solid and the bottom edges look a bit browned
  10. Remove to rack and cool
