Marinated Great Northern Beans

Ingredients

  • 2 cans (~15 oz) Great Northern beans, drained and rinsed
  • 6 Tbsp extra virgin olive oil
  • 2 Tbsp white wine vinegar
  • Zest of 1 lemon
  • 2 Tbsp freshly squeezed lemon juice (1 lemon)
  • 3-4 garlic cloves, peeled, minced
  • 1 large shallot, thinly sliced crosswise
  • 2 Tbsp sundried tomatoes (marinated or dried), chopped
  • 2 Tbsp fresh thyme leaves
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • ¼ tsp crushed red pepper flakes

Directions

  1. Pour the beans into a storage container. Set aside.
  2. In a small bowl, whisk together the olive oil, vinegar, lemon zest and lemon juice. Add the remaining 7 ingredients (garlic cloves through red pepper flakes). Mix well.
  3. Pour the mixture over the beans. Mix well.
  4. Tightly close the lid of the container. Refrigerate 30 minutes – 7 days.
  5. Serve hot, cold or at room temperature as a side vegetable, a salad ingredient or over toast, pasta, or rice.
