Ingredients
- 2 cans (~15 oz) Great Northern beans, drained and rinsed
- 6 Tbsp extra virgin olive oil
- 2 Tbsp white wine vinegar
- Zest of 1 lemon
- 2 Tbsp freshly squeezed lemon juice (1 lemon)
- 3-4 garlic cloves, peeled, minced
- 1 large shallot, thinly sliced crosswise
- 2 Tbsp sundried tomatoes (marinated or dried), chopped
- 2 Tbsp fresh thyme leaves
- ¼ tsp sea salt
- ¼ tsp black pepper
- ¼ tsp crushed red pepper flakes
Directions
- Pour the beans into a storage container. Set aside.
- In a small bowl, whisk together the olive oil, vinegar, lemon zest and lemon juice. Add the remaining 7 ingredients (garlic cloves through red pepper flakes). Mix well.
- Pour the mixture over the beans. Mix well.
- Tightly close the lid of the container. Refrigerate 30 minutes – 7 days.
- Serve hot, cold or at room temperature as a side vegetable, a salad ingredient or over toast, pasta, or rice.
