Magic Bean Snack Cake

Ingredients

  • 1 can (~15 oz) garbanzo beans
  • ¼ cup of half and half
  • Grated zest of one orange
  • ½ tsp five spice powder
  • 4 eggs, separated
  • ¾ cup + 1 Tbsp sugar
  • 1/3 cup slivered almonds, slightly toasted

Directions

  1. Preheat oven to 350 F. Grease an 8 x 8 baking pan and cover the pan with parchment paper (sides and bottom) Grease the parchment paper also sides and bottom.
  2. In a food processor place the garbanzo beans, the half and half, orange zest and five spice powder and process until smooth.
  3. In a separate bowl, beat the egg yolks and ½ cup of the sugar until light yellow in color – about 2 to 3 mintues.
  4. In another bowl, beat the egg whites until soft peaks form, then gradually beat in the remaining ¼ cup of sugar – another 2 minutes.
  5. Put a large spoonful of the beaten whites into the bean mixture and mix egg whites in, then add the remaining whites into the garbanzo bean mixture folding gently.
  6. Pour the batter into the greased 8 x 8 baking pan.
  7. Sprinkle the top of the cake with the toasted slivered almonds and 1 Tbsp sugar.
  8. Bake for 35 minutes or until the toothpick comes out clean.
  9. Let the cake cool before removing it from the pan and the parchment paper.
  10. Cut into servings and enjoy. Place the remaining cake in the refrigerator covered.
